Quick Vegan Mexican Cashew Dip
Try this dip with our Vegan Nachos. The perfect combination!
- ¼ red capsicum, roughly chopped
- 1 cup raw cashews
- pinch of salt
- ¼ tsp turmeric
- 1 tbs apple cider vinegar
- 1 tbs nutritional yeast
Submerge cashews in a bowl of water and soak for one hour to soften.
Drain cashews, and add to food processor along with remaining ingredients.
Process until smooth. Serve with Vegan Nachos with Spicy Mexican Beans (see recipe post).
