Pumpkin Soup Recipe with Coconut Bacon, Spiced Sprouted Sunflower Seeds

PUMPKIN SOUP RECIPE

Ingredients

Soup

  • 1kg pumpkin, skin and seeds removed, chopped

  • 1 onion roughly chopped

  • 1 potato, peeled and diced

  • 3 cloves garlic, crushed

  • 1 tsp turmeric
  • 1 tsp ginger
  • 2 cups vegetable broth

  • Salt and pepper to taste

  • ½ cup coconut cream

  • 2 tbsp coconut oil
  • Salt and pepper to taste

Topping

  • Coconut bacon

  • Spiced Sprouted Sunflower Seeds

  • Pomegranate
  • Fresh parsley

 

Instructions

1. Place all ingredients, except coconut cream, in a large pot or saucepan.

2. Bring to a simmer over medium heat until pumpkin and potato are tender.

3. Remove from heat, add coconut cream and stir through. Allow soup to cool slightly.

4. Transfer soup to a blender and puree until smooth.

5. Add salt and pepper to taste and serve with Coconut Bacon, Spiced Sprouted Sunflower Seeds, pomegranate and parsley. Enjoy!
