Vegan Cheesy Zoodles | Cashew Parmesan
VEGAN CHEESY ZOODLES
• 1 medium zucchini
• 1 block tofu
• 1 broccoli
• 1 tbsp. minced garlic
• 2 tbsp. olive oil
• 1/2 cup frozen peas
• Squeeze of lemon
• Salt, pepper and chili flakes to taste
• Big sprinkle of Cashew Parmesan
1. Spiralize a medium zucchini.
2. Chop 1 broccoli and 1 block of tofu, adding both to a fry pan with olive oil.
3. Once broccoli and tofu are cooked, add spiraled zucchini, minced garlic, frozen peas and a squeeze of lemon.
4. Add salt, pepper and chili flakes to taste, as well as a generous sprinkle of Cashew Parmesan before serving!
