TOFU SCRAMBLE
Ingredients
• 450g firm tofu
• 1/4 cup oat milk
• 1 tbsp nutritional yeast
• 1 tsp turmeric
• 1.5 tsp smoked paprika
• 1 mushroom, diced
• 1/4 purple onion, diced
• Handful baby spinach
• 1 tomato, diced
• Vegan Bacon Bits
Instructions
1. Preheat air fryer to 180°C (350°F) for about 3 minutes.
2. Meanwhile prepare tofu mix:
- In a bowl, mash tofu with a fork until crumbly.
- Add oat milk, nutritional yeast, turmeric, smoked paprika, tomato, salt, and pepper. Mix well.
3. Air-fry onions and mushrooms:
- Toss diced onion and mushroom with olive oil.
- Place in the air fryer basket (use a lined tray or small oven-safe dish if needed).
- Cook for 5–6 minutes, shaking halfway, until softened and slightly browned.
4. Add spinach:
- Open the air fryer, stir in spinach, and cook for another 1–2 minutes just until wilted.
5. Top with Vegan Bacon Bits and serve with toast!
