Easy Bean Chili | Cashew Parmesan

EASY BEAN CHILI

 

Ingredients

• 1 small onion, sliced ⁣

• 1 small capsicum, sliced⁣

• 250ml vegetable stock⁣

• 1 400g tin of canned tomatoes⁣

• 1 cup of tinned black beans, drained ⁣

• 1 cup of tinned kidney beans, drained⁣

• 1 teaspoon oil ⁣

• Spice mix: 1 tablespoon ground cumin, 2 teaspoons smoked paprika, 1/2 teaspoon oregano, 1 teaspoon garlic powder, 1 teaspoon salt ⁣

• Optional: chilli powder to taste ⁣

To Serve:⁣

• Brown rice ⁣

• Pickled cabbage⁣

• Roasted pumpkin ⁣

• Fried tempeh⁣

• Avocado

Cashew Parmesan

 

Instructions

1. In a small bowl, add together all the spices for the spice mix⁣

2. In a pan on medium heat, cook the onion & capsicum in oil for 2-3 minutes until softened. ⁣

3. Add in the spice mix and sautéed for another 1-2 mins. Then add the beans, stock, canned tomatoes and beans. Bring the mixture to a boil then reduce to low heat. Simmer for 10 minutes until the chilli is thickened.⁣

*Storage tips: in an airtight container in the fridge for up to 3 days or frozen for months ⁣
