EASY BEAN CHILI
Ingredients
• 1 small onion, sliced
• 1 small capsicum, sliced
• 250ml vegetable stock
• 1 400g tin of canned tomatoes
• 1 cup of tinned black beans, drained
• 1 cup of tinned kidney beans, drained
• 1 teaspoon oil
• Spice mix: 1 tablespoon ground cumin, 2 teaspoons smoked paprika, 1/2 teaspoon oregano, 1 teaspoon garlic powder, 1 teaspoon salt
• Optional: chilli powder to taste
To Serve:
• Brown rice
• Pickled cabbage
• Roasted pumpkin
• Fried tempeh
• Avocado
Instructions
1. In a small bowl, add together all the spices for the spice mix
2. In a pan on medium heat, cook the onion & capsicum in oil for 2-3 minutes until softened.
3. Add in the spice mix and sautéed for another 1-2 mins. Then add the beans, stock, canned tomatoes and beans. Bring the mixture to a boil then reduce to low heat. Simmer for 10 minutes until the chilli is thickened.
*Storage tips: in an airtight container in the fridge for up to 3 days or frozen for months
